Hotspots: 54° Steakhouse

Where are we off to?
To the heart of Amoy Street and 54° Steakhouse which, on first impression, looks nothing like the usual dark and clubby steakhouse! The dining room is bright, modern, and airy with a sense of sleek precision. There’s also a touch of Italian sensibility woven in thanks to the team behind Altro Zafferano and Griglia. As for the name of the venue, it comes from the temperature required for a perfect medium-rare steak.

So, what’s the idea here?
They haven’t tried to reinvent the wheel. Chef Andrea De Paola keeps things rooted in tradition with a menu that sticks to the core of what makes a steakhouse work – great beef, an open fire, and confident cooking.

How’s the atmosphere?
Relaxed, warm, and quietly polished. The open kitchen pulls you into the action, the shophouse setting keeps things intimate, and the service is a lovely balance between attentive and understated. It’s an easy room to settle into – we looked up and realised an hour had flown by!

How did the meal flow?
The starters set the bar high. The Cold Capellini was the surprise favourite being chilled and silky, yet packed with flavour. The Scallop & Mushroom dish was as delicate as it looked, the Yellowfin Tuna Crudo and Hamachi Crudo added freshness and colour, and the Foie Gras was rich without being overwhelming. Even the Caesar Salad had pizzazz.

Which steak won the show?
We went for the Black Onyx Ribeye and the Wagyu Striploin. The ribeye had that deep, satisfying flavour you want from Angus, but with the richness you’d usually expect from wagyu. The Wagyu Striploin was silky and beautifully cooked, but the ribeye edged it for sheer character.

How were the sides?
Simple, but done right. The asparagus had a good char, the potatoes were crisp and comforting, and the cherry tomatoes brought a freshness that helped cut through the richness of the steaks.

What about drinks?
It’s a quietly solid list with all your faves. Cocktails are well thought out without being fussy, and the wine list has great breadth meaning you get plenty of choice whether you’re splashing out or keeping things sensible.

And dessert?
Of course we tried all three! The Chocolate Tart was smooth and rich, the Vanilla Panna Cotta fragrant with just enough sweetness, and the Berry Pavlova delivered a satisfying crack-before-the softness. All three options offered a clean finish to the meal.

Any final thoughts?
54° Steakhouse is for steak lovers, of course, but also anyone who wants a steakhouse experience without the usual heaviness. Exceptional beef, great dishes beyond the grill, and a perky setting that makes you want to stay longer. With Chef Andrea De Paola’s Italian touch guiding the menu, it respects the steakhouse tradition while giving it a welcome, modern lift.
