Hotspots: Sophia

Bistecca alla Fiorentina

Oooh, we love a brunch!
For quality, Sophia, the modern Italian spot at The St. Regis, serves up one of the better-value hotel options around. Chef Angelo Sergio, who’s from Puglia, brings warmth to the menu where the focus is firmly on good ingredients and quality dishes, not a showy buffet spread.

We like our weekend dining chill – is this going to hit the spot?
Oh yes, one of the reasons brunches at Sophia feel so well-paced is the room itself. There’s no large dedicated buffet restaurant here, where diners spend their time weaving between stations; Sophia’s food is concentrated in a single room, with windows overlooking the garden. Movement is kept to a minimum, which preserves a relaxed vibe.

Salame di Cioccolato

Who’s it aimed at?
It’s family-friendly, but the mood naturally suits couples or small groups who want to chat rather than compete with noise. The live jazz trio add a touch of class. Don’t worry, it’s nothing intrusive, just a soft soundtrack that makes the whole thing feel sophisticated and a bit European!

With so many brunch options in SG, what makes this different?
The food is genuinely good. You can start with a mimosa or Aperol Spritz, and from there it’s a run of Italian staples done well. The mozzarella bar is a great opener with its simple but excellent produce. The pasta station is cooked to order, and the kitchen shows a nice amount of restraint. Freshly baked breads, a proper cheese-and-charcuterie table, and a gelato trolley doing the rounds give the whole experience personality.

Left: Spaghetti all’ Astice Right: Carpaccio di Gamberi

Any unmissables?
The tiramisu deserves its own mention. Servers bring it around the room, and it’s easily on par with the best versions you’d find in Italy – light, bold with espresso, and properly balanced. Having spent six years in Italy, I can confidently say that this tiramisu stands beside some of the best family recipes I encountered there. It’s a highlight not because it tries to surprise, but because it stays true to itself.

What are we drinking?
Opt for the champagne tier and you get free-flow Ruinart Brut which pairs well with just about everything. Otherwise, there’s a good mix of cocktails and wines that keeps things easy and fun.

Hit us with your parting shot!
Sophia’s Sunday brunch feels thoughtful rather than theatrical. Service is on point and you leave feeling looked after, not overwhelmed. It’s indulgent in the right ways, and perfect for stretching out at on a Sunday. Great value, superb tiramisu, and an unhurried atmosphere make it one of the more enjoyable brunches in Singapore. Don’t think twice about going, but do make a reservation as it gets booked up for a reason.
